Vineyards
Vines between 25 and 30 years old grown in Mendrisiotto. The vineyards are located in a hilly area, where exposure allows them to benefit from special microclimates favorable to quality viticulture.

Refinement
Alcoholic fermentation in French Sylvain and Gillet barrels (70% new; 30% second-passage) of medium toast, with bâtonnage once a week during the first two months. Aged in barriques for a period of eight months.
Winery
It is a wine that is appreciated in all its youthful vigor within five years of the vintage date, and so we recommend tasting it.
However, it has an amazing ability to age beyond 10 years, gaining smoothness and increasing complexity.
Tasting Notes
It offers intense aromas of acacia honey, peach, tropical fruits, vanilla, sweet spices and toastiness. In the mouth it is soft, creamy, intense, elegant and persistent.
Wine and food pairing
It accompanies high-quality seafood cuisine, risottos and pastas with shellfish and seafood, and white meats.
Curiosities
Merlot vinified in white is the type of wine that, when I was a sommelier in the restaurant business in French-speaking Switzerland, I used to let clients taste blindly when they asked me to let them discover something new and unusual. After being surprised at its taste and unable to accumulate it with the better-known types, they would be pleasantly surprised to discover that it was a Blanc de Noirs from Ticino. A wine that has given me much satisfaction as a sommelier.
