What makes a wine expensive?
It all starts in the vineyard—old vines, hand harvesting, and careful aging take time and passion. But does paying more always mean better wine?

Domaine Yvon and Laurent Vocoret

Ticino-style bubbles | Bonfire | RSI Info
In 2010, during the final of the Best Sommelier of Europe competition, I experienced a moment that would mark my path. From that experience came a prestigious collaboration with Duval-Leroy, one of the most renowned, beloved and recognized maisons in French haute cuisine for the finesse and elegance of its Champagnes.
Today, thanks to the great privilege I have been granted, I have the opportunity to select in total freedom their best wines to create a "tailor-made" cuvée, an exceptional Champagne produced in the rare and precious Grand Cru of Champagne.
I thank RSI's Falò program for including my Champagne in a report dedicated to Ticino bubbles. It is an honor to be able to tell this story through their work: [Link to broadcast].

Champagne Duval-Leroy, Cuvée Paolo Basso, Edition No. 4, 2014, 75cl
Edition no. 4 of my cuvée, made with Duval-Leroy, follows the same style of elegance and refinement as its predecessors: it is 100% Chardonnay from two of the villages classified "Grand Cru" of the Côte des Blancs: Chouilly et Cramant. Their soils impart a unique minerality and great taste and aromatic persistence. The 2014 vintage, which gave a vintage of great quality, rested for 10 years on the lees bringing great complexity.

Samhàin Ticino DOC Merlot, 2020 - pt 2

Samhàin Ticino DOC Merlot, 2020
We are pleased to announce the return of our Merlot "Samhàin", available from October 31, 2024, on the occasion of the Celtic New Year.

Il Rosso di Chiara, Ticino Red, Paolo Basso
Il Rosso di Chiara is the result of my professional transition to winemaking. This wine is distinguished by its strong character and distinct personality. Its composition is based mainly on traditional Merlot, enriched with 10 percent Cabernet Sauvignon and 10 percent Cabernet Franc, which give it structure and a refined elegance.

Samhàin Ticino DOC Merlot, 2019
Samhàin is a Merlot that encapsulates the generosity of the earth and the energy of the Ticino sun with a distinctly "Bourguignon" style. Its distinctive character can be perceived in its elegance and depth of expression. Like all my wines, it enhances its characteristics accompanied by food.
What links me to Samhàin? October 31, is my birth day.

Samhàin and Vertical Il Rosso di Chiara - Zunfthaus zur Waag

Il Rosso di Chiara, Paolo Basso
Il Rosso di Chiara is our flagship wine (emblematic): a Merlot from Ticino that is elevated by 10 percent Cabernet Sauvignon and 10 percent Cabernet Franc, varietals that, with the new climate, embellish the wine with structure, depth and persistence, promising excellent aging potential that adds to the immediacy of Merlot.

Il Bianco di Chiara, Merlot white, Paolo Basso
Il Bianco di Chiara is the elegant and complex merlot white that enhances the most elaborate first and second courses of fish. The nose surprises with notes of hawthorn, sweet spices, vanilla, citrus and tropical fruits. But it is in the mouth that it is at its best, with a smooth, round style, a delicate structure and a very persistent finish, where it reveals a great personality. It harmoniously accompanies lake and sea fish cuisine, with Mediterranean-style dressings and/or simply with a drizzle of extra virgin olive oil, as well as pastas and risottos prepared with fish and seafood.

Il Fiore di Chiara, Paolo Basso
It is a merlot vinified in white, complemented with some Chardonnay and Sauvignon. It is fresh, dynamic and multi-purpose and evokes the scent of spring flowers. Thanks to its lightness, it is the ideal wine for aperitifs and to accompany convivial cuisine.

Le Rosé, Merlot Rosé, 2023
It is a Rosé with a charming personality that accompanies aperitifs and enhances seafood cuisine, fragrant oriental dishes, sushi, veal tonnato and typical summer dishes.

Paolo Basso presents its wines
It all began unknowingly with grandfather's cellar, referred to during childhood as "the forbidden place." A place that in my childhood imagination concealed who knows what secret. Perhaps it was the wine that was the keeper of the secret, because grandfather treated it with care and respect and let it age in that calm place, where it seemed as if time had stood still.

The wine list at the restaurant
How often do customers, when faced with a wine list, feel lost?
Choosing the right wine can be a real challenge, especially when descriptions do not offer enough information to fully understand the peculiarities of each bottle.

Tasting a wine is a very long journey that requires knowledge and learning. Here are some small suggestions...

Cocktail, birra e vino
E se provassimo a scegliere la bevanda perfetta per un piatto di qualità? Mettiamo a confronto cocktail, birra e vino.

Bevande nate in laboratorio, senz’anima e senza storia.
Eppure l’alcol c’è comunque, solo che ha perso ogni legame con la natura.
Se davvero crediamo nella sostenibilità e nell’etica… iniziamo da qui: scegliamo il vino svizzero.

Terroir, it is the essence of a wine
"Terroir" is an untranslatable French word that encapsulates what makes a wine unique.
Terroir is not just the soil of a vineyard: it is the land, the climate, the plant and the man, the true bridge between the earth and the sky.

What is a Millesimato?
A vintage wine is made from grapes of a single vintage, unlike most effervescent wines, which are blends of several vintages. This tradition originated in Champagne, where the cold climate made it difficult to have great vintages each year, so people chose to set aside wine from a great vintage and blend it with less favorable ones to achieve consistent quality.
