Vinification and aging
Classic method with refermentation in the bottle.
Aging on the lees for at least 24 25 months, developing complexity and fine, persistent perlage.
Wine and food pairing
Ideal with seafood appetizers, fish crusts and mollusks, first courses of fish, boiled dishes and grilled fish; also excellent as an aperitif or for the entire meal.
Tasting notes
Light onion skin pink color with fine and persistent perlage. On the nose: scents of wild strawberries, currants, raspberry, cherry, pink grapefruit, with delicate biscuity and pan brioche notes. On the palate: fresh, soft and slightly savory with good dynamics.
