Plot area: 1.35 ha. Average age of vines: about 40 years.
Clay-pebble soils derived from Kimmeridgian colluviums on marls. Presence of marly limestone pebbles with a slightly whitish appearance, typical of the Chablis terroir.
Vinification and aging
Vinification respecting the family tradition of five generations. Very light static decanting to preserve a sufficient amount of fine lees, allowing the natural development of alcoholic and malolactic fermentations.
Aging of about 9 months in stainless steel tanks to maintain freshness, aromatic purity, and character.
Food and wine pairing
Ideal with fish dishes, shellfish, and seafood. Also excellent with white meat preparations or structured seafood cuisine.
Tasting notes
Chablis Premier Cru elegant and precise. On the nose, aromas of citrus, white fruit, and mineral notes characteristic of Kimmeridgian soils emerge. On the palate, it is tense, fresh, and savory, with beautiful structure and a long, refined finish.
