Designation of origin
Chablis Premier Cru Homme Mort AOC – Burgundy
Grape variety
100% Chardonnay
Vineyard location
Plot area: about 0.68 ha. Average age of the vines: about 40 years. Clay-pebble soils derived from Kimmeridgian colluviums on marls, with the presence of slightly whitish marly limestone pebbles. The soil shows light gray and beige tones when dry, typical characteristics of the great terroirs of Chablis.
Vinification and aging
Vinification respecting the family tradition of five generations. Very light static decantation to preserve a sufficient amount of fine lees, allowing the natural development of alcoholic and malolactic fermentations. Aging for about 9 months in stainless steel tanks to preserve freshness, aromatic purity, and character.
Food and wine pairing
Ideal with crustaceans, seafood, and grilled fish. Also pairs well with more structured fish dishes and white meats.
Tasting notes
Chablis Premier Cru of great precision. On the nose, aromas of citrus, white fruit, and mineral notes typical of Kimmeridgian soils emerge. On the palate, it is fresh, tense, and savory, with beautiful structure and a long, elegant finish.
Aging potential
3–10 years.
