Classic method with bottle refermentation and aging on the lees for at least 25 months, providing aromatic complexity, fine perlage, and structure.

Perfect as an aperitif, with seafood appetizers, crustaceans and mollusks, seafood risottos, grilled fish, or even light summer dishes. Its freshness and sapidity make it suitable for many courses
Tasting notes
Onion skin pink color with very fine and persistent perlage. On the nose, scents of wild strawberries, currants, raspberry, cherry, and pink grapefruit; on the palate it is fresh, soft, and slightly savory, with fruity aromas and slightly spicy and brioche notes due to the long aging on the lees.
