Wine made from Carminoir grapes, from a vineyard in Gudo with vines of an average age of about 20 years grown on south-facing soils characterized by granitic gneiss-type moraine soils. Production is about 800 g of grapes per plant. Carminoir is an interspecific cross between Pinot Noir and Cabernet Sauvignon obtained in 1982 at the Federal Research Station in Wädenswil. The plant produces medium-sized, compact and rather short red berry clusters. The grapes are harvested two weeks before full phenolic ripeness so as to preserve good acidity that gives freshness to the wine. Vinification takes place with a soft pressing of the grapes; fermentation takes place in new 225-liter French oak barrels, followed by aging with bâtonnage for 12 months.
