Vinification
In 2022, grapes were harvested on the between 16 and 21
September. Vinification lasted 42 days, with partial submerged cap in recent vintages. Gentle plunging and pumping over to spray the cap and extract only the most elegant tannins. Free-temperature fermentation (below
29°C), followed by malolactic fermentation in stainless steel vats.
Tasting Notes
Due to slow maturation in large oak barrels, it is accompanied by an intense and complex flavor profile and a dense and flavorful structure.
Wine and food pairing
It is an elegant wine that accompanies fine cuisine with traditional products such as stuffed capon, guinea fowl, and roast rabbit.
