Vineyards
Only the best Sangiovese grapes from old vineyards from the 1960s and 1970s are used, as well as some of those newly planted in the 1980s. The vineyards are located between 350 and 450 meters above sea level and face southwest.
Vinification
Depending on the vintage, the grapes macerate for 16 to 28 days, during which time the skins are lifted several times to help extract tannins and color from the skins, and the pips are removed from the must by a special process. Fermentation takes place at a controlled temperature. Once the must is separated from the pomace, the wine is aged for 18 months in French oak barrels, 30 percent of which are new.
Tasting Notes
Cepparello has a deep ruby red color in the glass and an exceptionally intense and concentrated fruity bouquet with aromas of ripe red fruit, black cherry, plum, cranberry, caramelized orange and citrus zest, floral notes, roasted herbs, pepper, tobacco and mineral nuances. Full-bodied, full-flavored, with ripe, full tannins supported by good acid structure, balanced and already very elegant.
Wine and food pairing
It is the wine that cannot be missed if you want to bring out the value of ribs and fillets of beef, lamb, pigeon, duck and game, as well as aged cheeses.
