Harvest time early September; gentle pressing of whole clusters; fermentation temperature 15-16°C; 5 months on fine lees with batonages; bottling in March.

With appetizers (rather hearty), first and second courses based on vegetables and fish, warmer vintages also with light white meats especially if served with vegetables
Tasting notes
It is at the same time an expression of some peculiar characteristics of the Sauvignon grape variety and the typical traits of our territory: a Sauvignon with elderflower, tomato leaf and peach aroma, with citrus and vegetal nuances and a mineral background, less pronounced and green and more composed and complex compared to typical Friulian-Alto Adige styles, and a mouth rich in structure and balance, with remarkable final persistence.
