Vineyard location
Plot “Les Hoz”, located in the municipality of Auxey-Duresses, in the village of Melin. Area of about 5 hectares facing south.
The vineyard is composed of Pinot Noir planted in two phases: one part in the 1950s, one part in 2000
Predominantly limestone soil, typical of Burgundy, with good depth and excellent capacity to express the grape variety.
Vinification and aging
Hand harvest in 12 kg crates to preserve the integrity of the grapes. Alcoholic fermentation in cement tanks with maceration of about 20 days. Aging: 12 months in barrique (about 10% new wood) + 2 months in tank before bottling
Food and wine pairing
Pairs perfectly with red meats, light game, roasts and mushroom-based dishes. Also excellent with medium-aged cheeses.
Tasting notes
Elegant and territorial Pinot Noir. On the nose, notes of small red fruits, light spices and earthy nuances emerge. On the palate it is fine, balanced and silky, with delicate tannins and a nice freshness that supports the drinking. Harmonious and persistent finish.
Aging potential
5–8 years, depending on the vintage.
