Vinification and aging
Late harvest of grapes affected by Botrytis cinerea (noble rot). About 90% fermented and aged in steel tanks, the rest in large wooden barrels (barrique). Overall long aging (about 28 months in total).
Wine and food pairing
Ideal with desserts (fruit sweets, crème brûlée), blue/blue-veined cheeses, foie gras or spicy dishes like Thai curry.
Tasting notes
Sweet wine with an intense aroma of honey and syruped fruit, candied citrus, peach and almond. On the palate full-bodied, elegant, fresh and harmonious with balanced acidity and persistent finish.
