Vinification and aging
The varieties are vinified separately in wooden truncated cones and cement tanks with slow fermentations and delicate extractions.
Tasting notes
On the palate it is dense and well-structured with a delicate and sunny character. The tannins are soft and support the long final persistence. A distinguished wine that represents an excellent prelude to its older brother, the Caiarossa.
Food and wine pairing
It accompanies tasty and intense cuisine based on red meats: beef, lamb, pigeon, wild boar and all game. Suitable for informal contexts, it is also comfortable with refined cuisine and will please both novices and connoisseurs.
