Vinification
We manually selected the grapes three times: directly on the vine, as whole bunches on sorting tables, and finally berry by berry after destemming. We carried out traditional vinification in vertical vats, with punch-downs and gentle cap wettings. Subsequently, the cap was submerged for a period of 57 days. Malolactic fermentation took place in steel the spring following alcoholic fermentation.
Tasting notes
On the palate it stands out for a fine complexity, a rich structure, and an aristocratic profile, with intense tannins and great persistence. To be consumed within 10-12 years from the harvest.

It is a distinguished wine that will honor the most important occasions, accompanying flavorful dishes from a cuisine rich in flavors: pasta and risottos based on meat and obviously truffle, red meats with long cooking times, game, and aged cheeses.
