Vinification and aging
It is fermented in small barrels with a balanced use of new wood, maximum 25/30 percent, and matured with a long period of contact with the lees. It is released every year on February 1st. Today the Chardonnay Private Collection of Isole e Olena is one of the most striking expressions of this great grape variety in Italy and has become a very rare wine.
Soil
The soil is a mixture composed of limestone, marl, and galestro.
Tasting notes
It expresses itself with great depth, structure, and an elegant and refined style, of supreme class. A wine with great personality that amazes for its gustatory density.

It is an important wine to be reserved for important moments and accompanies very refined cuisine based on seafood, either with Mediterranean sauces based on EVO oil, or with classic cream and butter sauces of traditional French cuisine.
