Vines between 25 and 30 years old cultivated in Mendrisiotto. The vineyards are located in a hilly area, where thanks to the exposure they can benefit from particular microclimates favorable to quality viticulture.

Aging
Alcoholic fermentation in French Sylvain and Gillet barriques (70% new; 30% second use) of medium toast, with bâtonnage once a week during the first two months. Aging in barriques for a period of eight months.
Cellar
It is a wine appreciated in all its youthful vigor within five years from the harvest date and we recommend tasting it this way.
However, it has a surprising aging potential that can exceed 10 years, gaining softness and increasing complexity.
Tasting notes
Offers intense aromas of acacia honey, peach, tropical fruits, vanilla, sweet spices and toast. On the palate it is soft, creamy, intense, elegant and persistent.
Food and wine pairing
Pairs with high-quality fish-based cuisine, risottos and pasta with crustaceans and seafood, white meats.
Curiosity
White vinified Merlot is the type of wine that, when I was a sommelier in restaurants in French-speaking Switzerland, I used to have customers taste blind who asked me to introduce them to something new and unusual. After the surprise at its taste and the impossibility of associating it with the more well-known types, they were pleasantly amazed to discover that it was a Ticino Blanc de Noirs. A wine that gave me great satisfaction as a sommelier.
