Vineyard location
Plot area: 0.48 ha. Average age of the vines: about 60 years. Soils composed of clay-limestone and Portlandian Barrois limestone marls, with the presence of small reddish pebbles. Sustainable viticulture. Manual harvest with picking of each plot at optimal maturity.
Vinification and aging
Vinification respecting the family tradition of five generations. Very light static decanting to preserve a sufficient amount of fine lees and allow the natural development of alcoholic and malolactic fermentations. Aging in French oak barriques from the harvest.
Food and wine pairing
Ideal with refined fish dishes and white meats. Excellent with Norman-style filet mignon and cheeses.
Tasting notes
Chablis of great elegance and complexity. On the nose, notes of white fruit, citrus, and mineral nuances typical of limestone soils emerge, accompanied by light buttery and vanilla sensations. On the palate, it is balanced, broad, and structured, with freshness and a persistent finish.
