Vineyard location
Vines located on the hills between Chavignol and Sancerre. Soils composed of 65% clay and 35% limestone. Limestone provides structure and tension, while clay adds breadth and substance. Intentionally low yields, high planting density, and grassing between rows.
Vinification and aging
Soft and slow pressing to preserve aromatic potential. Natural cold must clarification. Fermentation in stainless steel tanks at controlled temperature (16–19 °C). Aging on fine lees for 5–6 months.
Food and wine pairing
Pairs perfectly with fish, white meats, and fresh cheeses. Excellent with asparagus velouté and oyster-based dishes.
Tasting notes
Golden color with green reflections. On the nose, grapefruit, pineapple, white flowers, and boxwood notes emerge. On the palate, it is precise, broad, and crisp, with vibrant fruit and a persistent finish. Expressive and typical wine, combining freshness, complexity, and length.
Aging potential
3–5 years.
