Pommard AOC – Burgundy
Grape variety
100% Pinot Noir
Vineyard location
Plot “Les Combes”, located on the border with the Volnay appellation.
The vineyard consists of two plantings:
- one part planted between 1934 and 1937
- a more recent part, planted in 2013
Clay-limestone soils with a predominance of clay, which give structure and depth to the wine.
Vinification and aging
Hand harvesting in 12 kg crates to preserve the integrity of the grapes. Alcoholic fermentation in cement tanks with maceration of about 20 days. Malolactic fermentation followed by aging in barriques for about 12 months, with about 10% new wood. Pigeage done exclusively by foot for a delicate extraction.
Food and wine pairing
Ideal with red meats, roasts, game, and structured dishes.
Also pairs very well with mushroom-based preparations and aged cheeses.
Tasting notes
Characterful Pinot Noir, typical of Pommard. On the nose, notes of ripe red fruits, spices, and light earthy nuances emerge. On the palate it is structured yet elegant, with present but well-integrated tannins, supported by good freshness. Persistent, deep, and harmonious finish.
Aging potential
8–12 years, with excellent development over time.
Serving temperature
14–16 °C
