Vineyard location
Plot located in the center of the village of Vergisson, between the church and the Château de France. Shallow soil derived from gryphées limestone, with presence of silt and silica.
Vinification and aging
Hand harvest. Low pressure pneumatic pressing. After 24 hours of cold settling, the clear musts are separated to begin aging. Total aging of 21 months: 10 months in barrique - 11 months in stainless steel tank
Food and wine pairing
Pairs perfectly with noble shellfish, fish in sauce, structured white meats and mushroom-based dishes. Also excellent with medium-aged soft cheeses.
Tasting notes
Chardonnay of great concentration and precision. On the nose, notes of white flowers, ripe citrus and light mineral nuances emerge. On the palate it is broad, deep and structured, with mineral tension and a long, elegant finish.
Aging potential
8–12 years, thanks to the old age of the vines and the structure of the terroir.
