Vinification
Vinification took place in truncated cone vats, with gentle punch-downs and pump-overs, lasting about 27-57 days. The following spring, malolactic fermentation occurred in steel.
Tasting notes
It has a typical and good complexity nose that reveals aging in large oak barrels and a palate with deep and dynamic structure.
Food and wine pairing
Pairs well with substantial first courses, perhaps enriched with truffle when in season, roasts, red meats, aged cheeses.
