Vinification and aging
The harvest, entirely done by hand, started on September 5 and ended on September 21. The varieties from each plot are vinified separately in wooden truncated cone vats and cement tanks, with slow fermentations and delicate extractions. After malolactic fermentation, the wine is blended and transferred to large wooden barrels where it continues its aging for about 12 months.
Tasting notes
The result is a red wine with a rich and complex bouquet where aromas of ripe red fruits alternate with notes of sweet spices and black pepper, with a nice balsamic touch.
Food and wine pairing Excellent paired with first courses with meat sauces, risottos, grilled dishes, roasts. It is a versatile wine that can accompany convivial settings with varied dishes and more flavorful cuisine dishes.
