Location of the vineyards
Vines located on the hills between Chavignol and Sancerre. Soils composed of 65% clay and 35% limestone. The limestone provides structure and tension, while the clay adds breadth and substance. Deliberately low yields, high planting density, and grassing between the rows.
Vinification and aging
Soft and slow pressing to preserve aromatic potential. Natural cold clarification of the must. Fermentation in stainless steel tanks at controlled temperature (16–19 °C). Aging on fine lees for 5–6 months.
Food and wine pairing
Pairs perfectly with fish, white meats, and fresh cheeses. Excellent with asparagus velouté and oyster-based dishes.
Tasting notes
Golden color with green reflections. On the nose, grapefruit, pineapple, white flowers, and boxwood notes emerge. On the palate, it is precise, broad, and crisp, with vibrant fruit and a persistent finish. Expressive and typical wine, combining freshness, complexity, and length.
Aging potential
3–5 years.
