Vineyard location
Designation area: 19 hectares. Average vine age: about 45 years. Clay-limestone soils typical of the Chablis area.
Vinification and aging
Vinification respecting family tradition. Very light static decanting to preserve a sufficient amount of fine lees and allow the natural development of alcoholic and malolactic fermentations. Aging for about 9 months in stainless steel tanks, with small tanks that allow each parcel to best express its identity.
Food and wine pairing
Thanks to its freshness and slender style, it pairs perfectly with quality seafood dishes: carpaccios, tartares, raw shellfish, and oysters. Also excellent with first courses based on fish, seafood, white meats, and fresh cheeses.
Tasting notes
Elegant and precise Chablis. On the nose, notes of citrus, white fruit, and mineral nuances typical of limestone soils emerge. On the palate, it is fresh, tense, and linear, with beautiful sapidity and a clean, persistent finish.
Aging potential
3–5 years.
