Cuvée obtained from the blend of parcels located in Davayé and Prissé, coming from the lieux-dits Côte Rôtie, Les Châtaigniers, La Fournaise and Les Brosses. Soils composed of hard limestone more or less deep and Triassic sandstone rock.
Vinification and aging
Hand harvest. Low pressure pneumatic pressing. After 24 hours of cold settling, the clear musts are separated to begin aging. Total aging of 11 months: 70% in barrique, 30% in cement tanks. Barrique made of oak from forests of Burgundy and the Vosges, with about 1/7 new wood.
Food and wine pairing
Ideal with shellfish, baked or grilled fish, delicate white meats and soft cheeses. Also suitable for dishes with light butter-based sauces.
Tasting notes
Elegant and structured Chardonnay. On the nose it expresses notes of white flowers, yellow-fleshed fruit and light mineral nuances. On the palate it is balanced, with good breadth, well-integrated freshness and a persistent finish.
Aging potential
5–7 years, depending on the vintage.
