Vinification and aging
Alcoholic fermentation with selected yeasts in stainless steel tanks at controlled temperature (18 °C). Malolactic fermentation carried out. Wine not clarified, with very limited use of sulfites (about one third of the allowed limit). Aged on lees in the cellar for 8 years.
Extra Brut dosage (3.5 g/l) with liqueur aged in oak barrels
Food and wine pairing
Champagne of great structure and depth, capable of accompanying the entire meal. Ideal pairing with citrus-seared scallops, noble crustaceans or fresh goat cheeses such as Valençay
Tasting notes
Bright golden color, with fine and persistent bubbles.
On the nose it expresses an elegant and luminous aromatic complexity, with notes of sunny white flowers (jasmine), blood orange and toasted almonds.
