Vinification and aging
Harvest time early September; soft pressing of whole clusters; fermentation temperature 16-17°C; 5 months on the lees with batonnages; bottling in March.
Tasting Notes
Dry still white with slight residual sugar, giving added smoothness.

Love marriage with foie gras, shellfish, pumpkin dishes and medium-aged cheeses; great at the wine bar and with many richly flavored and sweet-and-sour-tasting dishes
