Vinification
Spontaneous vinification in raw concrete tulips, which is done exclusively with indigenous yeasts for about 20 days. The temperature reaches a maximum of 28°C. Soft pumping over is carried out. Aging takes place in 60 hl barrels of unroasted French oak for about 24 months.
Tasting Notes
The nose is elegant, with notes of blackberry, cherry and a touch of spice and cocoa. On the palate, it envelops with intensity and structure, noble, ripe tannins and a long, lingering finish.
Wine and food pairing
Accompanies the finest meats, both long-cooked such as braised and roasted meats, and short-cooked meats such as Florentine steak, pan-seared pigeon, and baked lamb loin. Also ideal with aged sheep and cow cheeses.
