Harvest time early September; soft pressing of whole clusters; fermentation temperature 15-16°C; 5 months on fine lees with batonages; bottling in March.
Wine and food pairing
With appetizers (rather sustained), first and second courses with vegetables and fish, warmer vintages also with light white meats especially if together with vegetables
Tasting Notes
It is at the same time an expression of some peculiar characteristics of the Sauvignon grape variety and of the typical characters of our territory: a Sauvignon with an aroma of elderflower, tomato leaf and peach, with citrus and vegetable nuances and a mineral background, less pronounced and green and more composed and complex than the well-known Friulian-Hotel Adige types, and with a mouth full of structure and balance, with remarkable final persistence.
