Fermentation in raw concrete vats at a controlled temperature of 18°C for about 30 days with indigenous yeasts. Resting on fine lees for at least 3 months.

Tasting Notes
Intense yellow color that becomes embellished with golden hues when the light shines through it. Delicious notes of yellow peach are released, along with hints of white flowers and mineral sensations of graphite. Hints of iodine, sage and almond characterize the full, vigorous sip. The finish is savory, persistent, with a recognizable and characterizing minerality.

This is a wine that enhances aperitifs with various finger foods, fish-based pastas and risottos, vitello tonnato, raw fish (sushi and sashimi) baked seafood.
