Vineyards
150 m above sea level with southwest exposure, on soils of volcanic origin with abundant stoniness. Presence of St. Vincent volcanites (rhyolites).
Vinification
Spontaneous vinification in raw cement truncated conical vats. Fermentation by native yeasts for about 13 days. Aging in large, unroasted French oak barrels for 12 months.
Tasting Notes
The result is an elegant wine with notes of black berry fruits such as blackberry and cherry, along with slight nuances of herbs. Structured, flavorful and dynamic, it is a long, lingering wine that enlivens the palate with its intense flavors.
Wine and food pairing
It accompanies Italian pasta dishes with meat sauces, grilled red meats, lamb, duck and pigeon, as well as game.
