Vinification
Vinification took place in truncated conical vats, with gentle punching down and pumping over, for a duration of about 27-57 days. The following spring, malolactic fermentation took place in steel.
Tasting Notes
It has a typical nose with good complexity that reveals aging in large oak barrels and a palate with a deep and dynamic structure.
Wine and food pairing
It goes well with important first courses, perhaps enriched with truffles when in season, roasts, red meats aged cheeses.
