Vinification

After bottling, Cabernet Sauvignon matures for another 3 years in bottle before being offered for sale. Cabernet Sauvignon from Isole e Olena has a storage potential of 10 to 25 years.

Tasting Notes

Cabernet Sauvignon has a deep dark red color in the glass. The nose is powerful and fresh at the same time, with aromas of paprika, spices, ripe fruit, cherries and black currants with hints of sweet tobacco.

On the palate, this Cabernet from Isole e Olena is incredibly engaging, soft and juicy, with gentle, aromatic tannins, full-bodied, a wine of character, elegant and dry in flavor. The finish is fresh, delicately spiced, with notes of dark chocolate and pleasantly persistent.

Wine and food pairing

This wonderfully juicy Cabernet Sauvignon pairs very well with dark meats, hearty game dishes, terrines, pâtés and aged cheeses.
