Edition no. 4 of my cuvée, made with Duval-Leroy, follows the same style of elegance and refinement as its predecessors: it is 100% Chardonnay from two of the villages classified "Grand Cru" of the Côte des Blancs: Chouilly et Cramant. Their soils impart a unique minerality and great taste and aromatic persistence. The 2014 vintage, which gave a vintage of great quality, rested for 10 years on the lees bringing great complexity. Finally, the extra brut style leaves great freedom of expression to this distinct and authentic Champagne.
Food and wine pairing
It is the best accompaniment to the aperitif and thanks to its structure and depth is a Champagne that accompanies the entire meal. It enhances fish and white meat cuisine and is a surprising match with hard cheeses such as Sbrinz and Parmigiano Reggiano, offering a unique and surprising taste experience.
